Oh Hey, Friday!

Thank goodness it's Friday, and the start of a long weekend no less!  Chris gets off the Friday before Monday holidays (i.e. Memorial Day and Labor Day).  We have a fairly busy weekend planned and I hope the weather cooperates.  Enjoy your last weekend of summer!


On Monday, I took Noah with me to do some shopping at Old Navy.  I tried on a few things and like a bunch of it.  But when you offer 30% online, but not in store, how could I not leave and just order the things I liked to come in a few days with free shipping???

While I didn't watch the Emmy's live, I did watch them the next day.  While I watch a lot of TV I don't watch a lot of the shows that are nominated (we don't watch anything on HBO, Showtime, Netflix, etc).  Regardless, I still enjoyed the show and love watching for the fashion.  I would have to say that these were my favorite looks!  


A few years ago Chris got me into Big Brother.  I originally thought it would be so stupid, but I'm now a huge fan.  Chris hasn't really been able to get into this season because he was so busy at work, but I'm hooked.  My favorites have been Nicole and Donny so I'm super bummed that they are both still on the block this week.  I really don't know who I want to go home!


Even though it was only a 4 day week for us (Chris is off today), we stayed pretty busy.  We had a few play dates, tried out PEP Club (kind of like a mommy & me preschool thing), ran some errands, and went to the pool.  I definitely prefer when are days are filled with activities!


Yesterday was our 4 year anniversary.  Chris surprised me with these beautiful flowers when I woke up!

We are going out to dinner tomorrow night to celebrate.  But I still wanted to do something a little special.  So I made a recipe from the cooking class we went to in February.  We then went out for some frozen yogurt afterwards :)

Penne with Kale Pesto with Walnuts and Parmesan Cheese
Serves 4


1⁄2 cup of walnuts

Kosher salt as needed

12 oz. about 1 bunch, Tuscan Kale, center ribs removed, leaves chopped coarsely 1⁄2 cup extra virgin olive oil, plus more for drizzling
8 cloves garlic thinly sliced
Zest of 1 lemon
1 pound short Italian imported pasta such as penne or fusilli
1⁄2 cup finely grated parmesan cheese


Preheat oven to 350 degrees.

Place walnuts in a sheet pan in a single layer and toast until golden about 7-10 minutes. Set

aside to cool.
To cook the kale and pasta, bring 4 quarts water to a boil in a large pot with plenty of salt.
Prepare an ice bath. Add kale leaves to boiling water and cook until tender, about 3 minutes. Using tongs immediately transfer kale a colander set in an ice bath to cool. Drain kale and set aside.
Place pasta into boiling water and cook for 9 minutes.
In a 12” skillet or Dutch oven, warm 1⁄4 cup olive oil over medium low heat.
Add garlic and cook until tender not browned, about 3 minutes. Remove from heat.
In a food processor, combine walnuts, kale in 2 batches, garlic oil mixture, the remaining 1⁄4 cup oil, salt and lemon zest.

Pulse until mixture forms a coarse paste then transfer back to skillet.

Drain pasta, reserving 1 1⁄2 cups water for sauce, and transfer to skillet with pesto.

Over medium heat toss pasta in sauce adding warm pasta water to loosen up the sauce. Add some grated cheese and season to taste.
Divide pasta among 4 dishes and finish with additional parmesan.

4 years = Flowers

Today is Chris and my 4th wedding anniversary!  We will be celebrating by going out to dinner this weekend.  Otherwise we are keeping it pretty simple this year.  I decided to go the traditional route this year for my gift to Chris.  I bought a hydrangea plant for our front yard... And then made him dig a hole and plant it!  I made him work for his gift ;). 

We ended up getting some help from my dad (aka our gardener).  Noah had fun helping too and playing with his new garden wheelbarrow toy (thanks grandma!).  

Happy Anniversary Chris!  I love our family and the life we've created!  Here's to many more years :).

Apple Picking | It's The Little Things

On Sunday morning, we took Noah apple picking.  He had so much fun strawberry picking that we knew we wanted to come again.  While Noah definitely got more into the strawberry picking, it was still a very enjoyable morning.  Despite it being only 70 degrees, I was sweating my butt off!  I definitely should have worn shorts!  Noah needed our help pulling the apples off the tree, but he had fun putting them in the basket.  We didn't get a ton, but I still have a few recipes planned with the apples that we did pick.

Are you ready for some football???

It's that time of year again... College football is back!  I have to admit that I never was into football (and even now not really) until I met Chris.  My brother went to Penn State, but it wasn't until I met Chris that I fully understood the obsession of Penn State Football!  Chris went to every game while attending Penn State and went back for every home game after he graduated with his season tickets.  We even got engaged after my first Penn State football game!  We have yet to take Noah to a game and plan to wait until he's much older.  In the meantime we love dressing him up in his jersey and now he even likes to run around with the football :)  This weekend Penn State plays in Ireland!!!  While we won't be going to that game ;) we will be having friends over to watch it.  Because of the time difference it will start at 8:30 AM, so we are doing breakfast instead of the usual appetizers I would put out for a game.  I'm pretty excited and think Noah will have fun at halftime throwing the ball around while the adults play some ladder golf.  

In honor of football season starting, we took Noah to the local high school's football field to throw the football around with Chris (and have a mini photo session).  Noah had so much fun running around with the football.  Chris even let him be the QB, handed him the football, and blocked the imaginary defense while Noah ran it to the end zone!  They then worked on their spiking skills ;)  Watching Noah and Chris having so much fun and bonding over Chris' love of football made me happy.  Though for safety sake Chris and I are happy for Noah to watch football rather than play ;)

Weekend Pictures

We had a pretty fun weekend.  We were hoping for some better weather so that we could go to the pool on Saturday, but we still had fun even with the clouds and random rain.  My friends (who I went to high school and college with) came over in the morning.  Chris has been looking for someone to play tennis with for a very long time.  Now that we have tennis courts in our development, he really wanted to find someone.  As luck would have it, my friend Kristen said her husband (who I also went to high school with) has been looking for someone to play with as well.  We arranged to get together, and the plan was for them to play tennis while we went to the pool with Noah.  (It was super coincidental that we arranged for them to play tennis the weekend before the US Open starts!)  When the weather didn't cooperate, we instead watched the guy play some tennis and then went for a walk around the neighborhood.  Noah got into the whole tennis things too, and of course we dressed him for the occasion ;)  I think we may have a future ball boy on our hands... or maybe even a tennis player???

Saturday afternoon, my college friend, Sharon came by for a visit and to see the house.  Noah was asleep when she got here, but woke up in time to give her the tour ;)   On Sunday morning, we took Noah apple picking... but more on that later this week.  After Noah's nap, we went to my parents' house for Sunday dinner.  Uncle Luke (my younger brother) works long days and many weekends, so it was nice for Noah (and us) to spend the afternoon with him.  When Noah and I see my parents during the week, we are usually heading home for bedtime by the time he gets home from work.
