4th of July BBQ | Bean and Corn Salad

Happy Hump Day!  After a 3-day holiday weekend, do you finally feel back into the groove of your normal life?  Chris is back at work, but we have Noah's cousins visiting this week, so we have lots of fun activities planned.  We did get to enjoy one lazy day at home, since my brother and his family decided to take the kids to the Statue of Liberty and Ellis Island yesterday.  While it sounded like a fun day, I really didn't think Noah was old enough to get much out of it.  Instead, we spent the day recovering from a busy weekend and preparing ourselves for another busy four days of going non-stop!


My brother and his family drove down to New Jersey on Monday.  Since they'd be arriving in the afternoon, we decided to host a 4th of July barbecue with them and my parents.  I made sure to have lots of good food as well as activities planned to keep the kids entertained.  I love to actually enjoy myself when hosting, so I try to do as much as I can ahead of time.  Even with all the prep, there was so much to do last minute (like grilling, getting all the food out at the same time, and refilling drinks) that I still felt rushed at time!  I can't imagine how I would have felt if I didn't do some prep!

First, I set the table for the adults.  I wish I had incorporated some red into my tablescape (being 4th of July and all), but I really like how our blue plates and glasses looked with my rattan chargers.   And while I was tempted to add a festive centerpiece, I know that we prefer to fill the table with food instead of something pretty to look at ;)


While our table perfectly sits the six adults, I wanted to give the kids a place to eat as well.  I moved around some of our deck furniture and brought Noah's craft table outside.  I put some kraft paper on top so the kids could color while they ate and added another "napkin banner" to add some color.  


Once the tables were set, I started preparing some of the food.  Since everyone was coming over around 3 pm, we planned for appetizers first, some playing, and then a BBQ dinner.  To keep things simple, we had a nice mix of store bought and homemade.  I also asked my mom to bring a few things as well.  In addition to marinating the chicken (1 cup brown sugar, 1 cup oil, 1/2 cup soy sauce, 1/2 cup vinegar) in the morning, I made this black bean and corn salad.  My dear friend, and amateur chef, gave me this recipe after I went back for multiple servings at her house.  I have to admit that the first time I made this recipe, I followed it exactly and cooked my own dry black beans.  When I told her mine didn't taste as good as hers, she felt so bad that she hadn't mentioned that she altered the recipe and uses Goya canned black beans!   No biggie, I'm always happy to hear an easier way to make a recipe ;)


Black Bean & Corn Salad
(adapted from Food Network)

Ingredients:
2 15.5 oz cans of black beans (I used Goya), drained and rinsed
4 plum tomatoes, chopped
Salt
2 cups corn kernels (my friend roasts the corn, I used 2 packages of frozen corn that I cooked in the microwave)
1/2 red onion, chopped
1 bunch cilantro, chopped (I'm not a fan of cilantro so I omitted)
Juice of 1 lime
1/4 cup olive oil
Pepper
Cayenne

Directions:
Place chopped tomatoes into a bowl and mix with 1 tsp of salt.  The recipe suggests letting sit for 30 minutes.  I just let it sit while I prepared the following ingredients.    
Drain and rinse the black beans.  Add the beans, corn, and chopped red onion to the bowl and mix. 
Add the cilantro (if using), salt and pepper seasoning (to taste), olive oil, lime juice, a couple shakes of cayenne, and mix again.
Either serve immediately or cover and let sit on counter.  Mix it one last time before serving.  
Note: I made this the morning of the BBQ and it was perfect when we ate it at 6pm.  


Once my family arrived, it was time to sit back, eat, and enjoy!  The adults were all about the appetizers while the kids were thrilled to draw on the table and then play in the sand and water tables.  Noah went through 3 shirts in about an hour.  First it was because I wanted to keep his 4th of July shirt fresh for a cousin photo (that didn't happen), and then it was because he got wet from the water table and wanted a whole new outfit!

After we finished eating our veggies, shrimp, mozzarella & tomato, and a few dips, it was time to play.  We headed to the front yard for some soccer, rocket launching, and finally some corn hole.  We ended up breaking almost every single one of our rockets (what can you expect from $5 rockets?), Noah didn't understand that he's not the only one who gets to kick the ball into the goal, and the guys now think they are amazing at corn hole since we set the boards up so close together for the kids ;)

Enough play... time to eat again!  For dinner, we had burgers, hot dogs, and chicken, as well as a bunch of salads (fruit, macaroni, potato, and the bean & corn salad I shared above).  The kids were eager to get back to playing, so we brought some chalk across the street while we waited for our dessert to arrive... the ice cream truck!  I mentioned a few weeks ago that there's an ice cream truck  company in my town that you can schedule to come to your house.  We loved it so much that I immediately called them when I found out the cousins were coming to town.  The kids loved getting to order their own ice creams and eat them on our front lawn.  We lucked out and finished our ice cream and headed back inside before the rain came.  


Noah had so much fun with his cousins.  It was so nice to see him running around and playing with them!  As soon as they left, the exhaustion set in and we rushed him off to bed before he could have a meltdown.  He was fast asleep real quick that night ;)

An Unfinished Patriotic Photoshoot | #StarSpangledKids

So while I'm always home, and my husband does have work today, I'm still calling today the start to a long holiday weekend!  Not only is it a new month and a holiday (Canada Day), but it's also the first day you can link up with our 2nd Annual Star Spangled Kids!  Chances are you have something red, white, and blue for your kids to wear this weekend, so if you haven't already done so, grab your camera and take some photos!  In addition to linking up here (you have until July 7th!), make sure to tag all your social media shares with #StarSpangledKids !!!  


Last weekend, I got Noah all dressed up, had Chris ready to encourage some smiles with his goofy antics, bribed Noah to smile for a few photos and went outside for a mini patriotic photo session.   Noah was more excited to swing the flag than really look at me, but I was trying to make it work.  We had some overcast skies which I was loving, but then the clouds shifted and it was getting a little too sunny.  Since we had only taken a few photos, I suggested we move to the backyard where there is more open shade.  I was hoping to take a few more photos in this shirt and take even more with another flag shirt Noah has.  All these plans went out the window when I saw a bear walking through my backyard as I was walking back there with Noah and Chris following behind me.  Boy was I scared!  I turned around, told Chris to grab Noah and we ran inside.  We were all a little shaken up, and our photo shoot was obviously over.  While we could have gone out again this week, I have to admit that I was a little nervous to do so on my own, so these will have to do.  Hopefully I will get a few more this weekend... maybe a few with Noah's cousins even!

And in honor of Canada Day, here's a photo of Noah in his "Team Canada" shirt from last summer.  I'm hoping I can get another photo of him wearing it this year as well (I bought it in two sizes last year for this exact reason!).  Recently it's been acting as his Superman cape, but I think I'll try to talk Noah into wearing it the "normal way" today ;)

How we do red, white, and blue

Stars, stripes, red, white, and blue.  I'm not one to normally make a deal about 4th of July.  Sure, Noah will wear a patriotic shirt and we make sure to barbecue (either hosting or as a guest), but I have never gone all out for the holiday.  But this year, Noah's cousins will be visiting that week. We will be hosting a family barbecue, so I wanted to do a little extra something.  


I had hoped to show you my plans for making our deck a little more patriotic, but this is where my deck furniture currently sits.  Thankfully this is for a really good reason.  Our deck was looking a little worse for wear, so my amazing dad offered to paint it for us.  I simply picked up the paint and he got to work.  My dad is a perfectionist, and he spent 3 mornings giving the floor, stairs, and railings two coats.  This afternoon the furniture will all be back to where it belongs and we can start enjoying our deck again!  


But in the meantime, I decided to experiment with some of the patriotic decor I picked up, just inside instead of out.  While summer to me is all about outside living, I can't help but smile when I see this red, white, and blue set up in my living room.  I may just keep it like this through the 4th :)  


The best thing about this is how easy and affordable it is to recreate.  Everything I used was stuff I already had (the white urn, blue bowl, and star dish), while the rest was from the Target dollar spot or Home Goods.  And I think my favorite part is the DIY banner I made using cocktail napkins... yes, cocktail napkins.  I got the idea from Courtney and basically ran to my nearest Home Goods to pick up some patriotic napkins.  This is the most genius and simple idea I've ever come across.  

Here are the step by step instructions:
1.  Take a piece of string (I used bakers twine since the red and white worked well in this scenario) 
2.  Hang it across your wall (I tied it to some mini 3M hooks so I can cleanly remove when done)
3.  Take your cocktail napkins and just hang them over the string
Note:  If you are hanging this outside, you can use double sided tape on the inside of the napkin fold to ensure they stay in place.  

That's it... it's seriously so easy!  And the options are endless since there are so many amazing cocktail napkins out there.  You could make this banner for almost any occasion!  


Since Noah's cousins will be here for the actual 4th, I decided to pick them up something fun.  I found these glow stick lanyards in the Target dollar spot and thought they would be perfect.  I got enough of them so that each kid could have a red, white, and blue glow stick that they can wear around their neck when it starts to get dark. 

I also plan to have these little flags and the red, white, and blue votives out on the table.  I figured the kids could wave the flags around and we could light the candles as it gets dark.  I love when decor is functional :)


As I plan for our 4th of July barbecue, I can't help but want to recreate a few things that we did this past weekend with friends.  We got together with 2 other families and had a really nice and laid back evening filled with amazing food and great company.  While our amazing host served the most delicious dinner, I offered to bring the sangria.  And I want to let you in on a little secret of mine... I buy sangria from a bottle!  I know, I know, I could and should (??) probably make my own.  But once you taste this you'll find that it's just so much easier this way.  

So I buy the Señor Sangria brand from our local liquor store.  I haven't tried other brands, so I can't really compare, but this brand I like.  And so far everyone else who's had it loved it too!  I have tried both the red and the white variety and they are both really good.  While you technically can just shake, pour, and drink, I like to put in a little extra effort to make it that much better.  Also, if you made this ahead of time, I'm sure no one would know you didn't make it yourself!  

I put some cut up fruit into each glass.  When I served the red, I used strawberries and oranges, and when I served the white, I used strawberries and white peaches.  Then pour the sangria right on top of the fruit.  I then topped it off with some pellegrino... I found it added just the right amount of fizz.  While you can easily make a pitcher of this, I liked the ease of just making everyone their own glass.  You could even set up a "sangria bar" where your guests could easily choose red versus white and customize the fruit they want added.  For 4th of July I'd love to add some blueberries to really give it that red, white, and blue pop!  


Another thing I definitely want to do again involves an ice cream truck!  In our town, there's an ice cream truck company that is owned and operated by a family who has 5 sons.  They bought the truck with the intention of giving their boys a summer job and teaching them how to run a business.  While they make the rounds to all the playgrounds and pools, they also make house calls.  You basically just tell them what day and time you want them to come and then you simply pay for the ice cream you order.  I think it's genius and the kids absolutely love it!  Who wouldn't get excited for the ice cream truck coming to your driveway just for you!?!

Just Keep Swimming

When our plans to go away for Memorial Day Weekend were cancelled, I was amazed at how quickly we made new ones.  We cancelled our trip to Montreal for a couple of reasons.  One... we were supposed to leave on Friday, when there was still a chance of Noah being contagious, for a 6+ hour drive.  Wednesday evening he had a rough night of tossing and turning and his school had requested he stay home on Thursday just in case.  We didn't want to take a chance of him being uncomfortable for the entire drive or having another rough night in the hotel.  Two... we were going to be visiting my very pregnant cousin (who also has a young child) and I really did not want to risk infecting either of them.  While Noah ended up being fine, I still think we made the right decision in cancelling our trip.  And we are already talking about rescheduling the trip of the end of the summer :)  

As for our new plans... we spent a lot of time outside and at the pool.  While yesterday wasn't very nice due to Tropical Storm Bonnie, Friday through Sunday were sunny and hot (in the 90s and humid)!  After running errands and entertaining Noah at home on Friday, we were ready to have some fun!  Our neighborhood pool opened at 10 am on Saturday, and we made sure to go right away!  Noah's been getting really good at swim lessons and is so much more comfortable in the water.  He now wears goggles, sticks his head under water, and even swims a little on his own (not far, but still!).  While Chris sees videos of his progression, I was so excited for him to witness it first hand.  And I was excited to use my new waterproof camera   Last year I bought a waterproof pouch for my phone, which was perfect for last summer.  Noah was just swimming around in his floaty and jumping off the side of the pool, so I was able to have my phone handy and take it out when I wanted a photo or video.  But now that he's actually going underwater, I wanted to upgrade to something a little better.  I'm also obsessed with photos of kids swimming underwater and couldn't wait to try it out myself!  I'm so pleased with my first attempt and can't wait to practice more this summer!

In addition to lots of underwater swimming, Noah learned that he is now tall enough to walk in the 3 feet section of our pool on his tippy toes!  He's grown a lot since last summer, so this is a big deal!  Noah would go back and forth between the big pool and the baby pool.  He would practice his swimming in the big pool and then play with his pool toys in the baby one.  We have a few diving toys that are really meant for older kids in the shallow end, but they work perfectly for Noah in the baby pool!  He also loves taking the fish and net in the bath :)

On Sunday, we were back at the pool, but this time we went to the town pool as our friends' guests.  These are our best family friends and their kids just so happened to get sick a day after Noah did (so they obviously infected each other... just have no clue where it originated from!).  When they found out we weren't going away, they immediately asked us if we wanted to spend the day at the pool with them, to which we obviously said yes!  Our town pool is so cool and we definitely plan to join next year.  In addition to the "big pool", they have a baby pool and slide, a sprayground area, and some bigger slides too.  We packed lunches and let the kids go back and forth between the big pool and the little kid area all day.  Now that Noah doesn't nap, we were able to spend the entire day there!  We've already been invited back again, so between the town pool and our neighborhood pool, I envision us spending a lot of time poolside!

And while Noah doesn't nap anymore, spending all day out in the sun really wears him out!  He passed out at 5:30, sitting straight up and barely eating his dinner.  I'm just relieved I got him a bath and pajamas on first!   I think we may be bringing naps back to our summer routine ;)
