What's for Dinner?

I was hoping to share a new weeknight recipe with you today.  And while I have been cooking this summer, it's either been recipes I've already shared or I didn't find the time to photograph them.  Chris has been working late a lot recently, so I try to make things that package well so he can reheat them at a later time.  Our newest favorites are anything with chicken, veggies, rice, and some teriyaki sauce, like this casserole!  There are also many evenings, when I know it's just going to me and Noah, that I find eating dinner at the pool is a much easier option.  I will definitely miss this come September!  


So while I am eager to find some new quick recipes to try this fall, here are some of my favorites that I've shared in the past...


In a past post, I shared some of my favorite meals, as well as how I meal plan.  You can check out my baked ziti, manicotti, quiche, and chicken taquitos recipes here.  In addition to how I meal plan, I also shared some of my meal prepping tips.  In that post, I also shared two more of my favorite recipes... Stuffed Tomatoes and Mexican Rice Casserole.  I literally make the mexican rice casserole at least once a month!   Another favorite is this Mexican Tortilla Soup, which I haven't made in a while, but plan to make a lot of when the cooler temps come!

  1. Fining time to take recipe photos is so hard, right? Like who has time for that on a weeknight?! Probably why I seldom blog main dishes and stick with sides, desserts, or breakfast foods :P.

  2. Confession – I haven’t been cooking much at all! I blame it on us being on the go, all of the time. But, I know that will all change when school starts back up so I will just enjoy the cook-less nights while I can.

    Ps -I am still loving that swimsuit you’re wearing in that photo!

  6. James always laughs at me because I use a certain plate/bowl when snagging food photos. He will ask "Can I go ahead and eat or not? Do you need a photo of this?!"

  9. I've yet to try all these recipes that you've shared but I've pinned them all! I really need to go back and start making some. I've been in such a dinner rut lately and we literally just have the same stuff on repeat week after week. I need some new recipes to try!
