Oh Hey, Friday!

Thank goodness it's Friday, and the start of a long weekend no less!  Chris gets off the Friday before Monday holidays (i.e. Memorial Day and Labor Day).  We have a fairly busy weekend planned and I hope the weather cooperates.  Enjoy your last weekend of summer!


On Monday, I took Noah with me to do some shopping at Old Navy.  I tried on a few things and like a bunch of it.  But when you offer 30% online, but not in store, how could I not leave and just order the things I liked to come in a few days with free shipping???

While I didn't watch the Emmy's live, I did watch them the next day.  While I watch a lot of TV I don't watch a lot of the shows that are nominated (we don't watch anything on HBO, Showtime, Netflix, etc).  Regardless, I still enjoyed the show and love watching for the fashion.  I would have to say that these were my favorite looks!  


A few years ago Chris got me into Big Brother.  I originally thought it would be so stupid, but I'm now a huge fan.  Chris hasn't really been able to get into this season because he was so busy at work, but I'm hooked.  My favorites have been Nicole and Donny so I'm super bummed that they are both still on the block this week.  I really don't know who I want to go home!


Even though it was only a 4 day week for us (Chris is off today), we stayed pretty busy.  We had a few play dates, tried out PEP Club (kind of like a mommy & me preschool thing), ran some errands, and went to the pool.  I definitely prefer when are days are filled with activities!


Yesterday was our 4 year anniversary.  Chris surprised me with these beautiful flowers when I woke up!

We are going out to dinner tomorrow night to celebrate.  But I still wanted to do something a little special.  So I made a recipe from the cooking class we went to in February.  We then went out for some frozen yogurt afterwards :)

Penne with Kale Pesto with Walnuts and Parmesan Cheese
Serves 4


1⁄2 cup of walnuts

Kosher salt as needed

12 oz. about 1 bunch, Tuscan Kale, center ribs removed, leaves chopped coarsely 1⁄2 cup extra virgin olive oil, plus more for drizzling
8 cloves garlic thinly sliced
Zest of 1 lemon
1 pound short Italian imported pasta such as penne or fusilli
1⁄2 cup finely grated parmesan cheese


Preheat oven to 350 degrees.

Place walnuts in a sheet pan in a single layer and toast until golden about 7-10 minutes. Set

aside to cool.
To cook the kale and pasta, bring 4 quarts water to a boil in a large pot with plenty of salt.
Prepare an ice bath. Add kale leaves to boiling water and cook until tender, about 3 minutes. Using tongs immediately transfer kale a colander set in an ice bath to cool. Drain kale and set aside.
Place pasta into boiling water and cook for 9 minutes.
In a 12” skillet or Dutch oven, warm 1⁄4 cup olive oil over medium low heat.
Add garlic and cook until tender not browned, about 3 minutes. Remove from heat.
In a food processor, combine walnuts, kale in 2 batches, garlic oil mixture, the remaining 1⁄4 cup oil, salt and lemon zest.

Pulse until mixture forms a coarse paste then transfer back to skillet.

Drain pasta, reserving 1 1⁄2 cups water for sauce, and transfer to skillet with pesto.

Over medium heat toss pasta in sauce adding warm pasta water to loosen up the sauce. Add some grated cheese and season to taste.
Divide pasta among 4 dishes and finish with additional parmesan.

    Also, CUTE chambray shirt!!! And I agree, I always buy online from Old Navy. Especially when they have sales and especially when shipping is free over $50! I don't know why they don't have the same sales in store...
