All Things Green - St. Patrick's Day Lucky Linkup

The Valentine's Day decorations have come down, and our apartment has been touched by a leprechaun.  Our welcome sign has been updated, I added a garland of four leaf clovers, and I've done a few festive crafts with Noah.  I also have to admit that I've stopped by McDonalds for my annual Shamrock Shake!

I also made some St. Patty's Day cookies, otherwise known as Mint Chocolate Chip Cookies.

You could use your favorite chocolate chip cookie recipe for the base, but I went the super simple route and just added chocolate chips to a sugar cookie dough.  

Pillsbury Sugar Cookie Dough
1/4-1/2 tsp mint extract
6-8 drops green food color
1 cup Andes mints (broke into pieces)
1 cup semisweet chocolate chips

Heat oven to 375°F. In large bowl, stir together all the ingredients.  Using medium cookie scoop, drop dough 2 inches apart on ungreased cookie sheet.

Bake 10-12 minutes or until set. Cool 3 minutes; remove from cookie sheet to wire rack. Serve warm or cool completely. Store tightly covered at room temperature.
